I totally snagged this recipe from the Food Network

Ingredients

1 ¾ cups of all purpose flour
1 ½ teaspoons of baking soda
½ teaspoon salt
1 cup of cocoa powder
2/3 cup of light brown sugar
1 ½ sticks of unsalted butter, softened
2/3 cup of sugar
2 large eggs at room temperature
1 cup of buttermilk
½ cup of sour cream
2 tablespoons of brewed coffee
2 teaspoon of vanilla extract

2 teaspoons of baking powder
½ teaspoon salt
½ cup of packed sweetened shredded coconut
1 ½ sticks of unsalted butter, softened
1 1/3 cups of sugar
2 large eggs plus 2 large egg whites
¾ cup of coconut milk
1 ½ teaspoon of vanilla extract
1 1/3 cups of shredded coconut flakes
