I know half the people reading this blog right now are totally judging my Twilight love and hey, that's okay because I'm completely secure enough in my awesomeness to admit I really enjoyed the Twilight series of books. I couldn't put them down and wound up reading Breaking Dawn in less than a day. The movies were adequate, but never as awesome as the actual books. Then again, that's usually how things work!
That being said, my sister Nicole and I decided to make some Red Apple cupcakes based on the little apple trick Edwards does in Twilight. Enjoy the concoction below!
Strawberry Cupcake Recipe:
Servings: 24
Prep Time: 10 minutes
Cook Time: 15-20 minutes (It took 17 minutes in my oven)
Total Time: 25-30 minutes
Ingredients:
1 Box of Pillsbury Moist Supreme Strawberry cake mix
1 cup of milk
1/3 cup of oil
3 eggs
1 Container of Betty Crocker whipped Strawberry frosting (or regular vanilla if you prefer)
Red food coloring
Red sugar sprinkles
Tootsie Rolls
Green fondant
24 cupcake holders (red or white)
Directions:
Preheat the oven to 350°F and line a cupcake/muffin pan with cupcake liners.
1. In a medium bowl mix together the cake mix, the oil, milk, and eggs. Beat together until smooth and then add 12 drops of red food coloring. We found that starting with pink batter and adding red makes it a darker pink/red, which is absolutely what we wanted.
2. Fill the cupcake liners almost to the top and then spread sprinkles over the top of the uncooked cupcake. Simple right? We totally took the easy way out with the box mix this time.
3. Bake for 15 -20 minutes at 350°F. Let them cool in the pan for 10-15 minutes, then remove.
4. Decorate with icing. Add half of a small tootsie roll. Form a leaf using the tutorial in the Evermore Tulip Cupcakes from last months Bookish Bakes. Finally add the red sprinkles over the cupcake until it's covering all the pink frosting and viola! You have your Strawberry Apple Cupcake!
